Our cheeses are all handmade in our very own Cheese Factory using the finest quality Riverina fresh milk, a recipe that has proven to be an award-winning combination. Our collection of trophies, gold and silver medals grows each year as a testament to fine quality ingredients and great cheesemaking. The Cheese Factory is located on the grounds of Charles Sturt University's Wagga Wagga Campus in the beautiful Riverina region, heartland of NSW. Sales from our boutique factory began through the Cellar Door in 1999 and have expanded rapidly since then, along with our reputation for quality and excellence. The CSU Cheese Factory is operated by Barry Lillywhite, a unique cheese-maker and cheese show judge with an unbridled passion for all that he does (that's Barry smiling on the front cover). CSU Cheesemaking courseAt present, CSU offers a cheesemaking course for those wanting to make small batches of cheese for use in their own kitchens. More about the Cheese Making Course Food science at CSUCSU offers two undergraduate degrees in food science – the Bachelor of Applied Science (Food Science) and the Associate Degree in Applied Science (Food Processing). These courses are interdisciplinary programs to provide students with integrated knowledge and the skills to work in food manufacturing organisations, government food administration bodies and food research laboratories. The programs are supported by an on-site commercial cheese factory and a modern food pilot plant for hands-on practical experience in unit operations, food hygiene and sanitation, food control and legislation, as well as food quality assessment, marketing and distribution. The Bachelor degree program is offered both internally and by distance education (DE). On campus study is three years full-time and DE requires six years of part-time study. The Associate degree is only available by distance education (four years). A significant proportion of distance education students who apply for entry to these courses have already completed a food science qualification at certificate or diploma level at TAFE or equivalent colleges throughout Australia. Subsequently, the School of Wine and Food Sciences at CSU has developed articulation packages with several TAFE colleges to provide students with exemptions based on prior study. Students with qualifications in food science and related fields are especially welcome to apply for our courses.
