Our Cheese

Made by professional, award-winning cheesemakers, CSU's range of unique gourmet cheeses have a distinctly Australian flavour. All handmade from the Riverina's highest quality milk, these versatile cheeses aren't just made, they're nurtured … ensuring your experience is love at first bite!Whether your passion is aroused by native mint, a touch of bush tomato, forest berries, piquant pepperleaf, the zesty lemon myrtle, exotic fetta or labneh, or classics such as cheddar or ricotta - you're in for a tasty treat.

Cheddar Collection

The Factory's Cheddar heralds a return to traditional cheesemaking methods, with open vats and everything done by hand. Using these methods and specialised cultures, we have developed a cheddar which can only be described as a classic.

 

 
 

Classic Mild Cheddar – look for the yellow wax

The flavour of this classic cheese is best described as clean, mildly aromatic, nutty and pleasantly acidic. This extremely good young cheddar (at least 16 weeks maturing) is rich in colour, has a firm but pliable body with a smooth and creamy mouthfeel.

Mature Cheddar – look for the red wax

An exceptional cheese which has been matured and nurtured for a minimum of nine months. The development of this cheese from the mild stage to mature is complex but the result is a cheese which has a full, sharp flavour and a slightly crumbly texture.
