Cheese Making CourseThe 2 day workshop provides the opportunity to learn the skills required to make quality farmhouse cheese in your kitchen at home. Under the direction of our award winning cheesemakers you will make soft cheeses such as ricotta and hard cheeses such as cheddar in our modern commercial cheese factory on campus. The workshop is completely hands-on with the participant numbers kept to an absolute maximum of 10 to ensure that your experience is almost on a one-to-one basis with our lecturers. Along with the knowledge and skills acquired over the weekend, the participants may take home the cheeses they create, along with cheesemaking hints and recipes. The workshop is conducted in Charles Sturt University's (CSU) own cheese factory and food pilot plant, using the local milk from the Riverina. The factory has been turning out our unique award winning cheese since its inception in 1999. Our Australian native flavour collection of cheeses are now widely available in selected supermarket chains and speciality food stores throughout Australia under the name of Bidgee Cheese.
