A Practical Introduction to Cereal Chemistry

The workshop will be based on a book written by Dr. Phil Williams called “A Practical Introduction to Cereal Chemistry”. It will focus on the practical aspects of cereal chemistry and will attempt to teach its participants how and why things happen, why things are done, what tests are commonly applied, and what the results should look like.

The workshop will cover some aspects of the things that have had to happen to a sample of grain before it arrives in a laboratory, or onto a ship to be exported. The molecular concept of viewing and understanding cereal chemistry will be introduced. Changes that take place during the processing of cereals are discussed.

Phil has written this book with the view that the reader will know practically nothing about cereals, cereal quality and the chemistry of cereals. Participants will receive a copy of the book. Cereal chemistry is considered from both the laboratory and industrial aspects. The book addresses all cereal grains, and has been written mainly for people who are just beginning their careers in one of the world’s most widespread technical fields, or who are marketers of cereals in an ever-changing industry.

The one day workshop will take place on Thursday 1st October 2009 from 9am to 4.30pm at Charles Sturt University, Wagga Wagga. Lunch, morning and afternoon tea included.
