WSC504 Advanced Oenology (8)

Students completing this subject will have the capacity to identify and critically evaluate new techniques or technologies that may be suitable for adoption in commercial winemaking. They will be introduced to the methodologies for undertaking a critical appraisal of the relevant literature and for evaluating new technologies. Additionally students will critically evaluate the format and operation of a current wine show.

Learning Outcomes

Upon successful completion of this subject, students should:
  • be able to identify and review the relevant literature on a selected research topic;
  • be able to describe approaches for the rigorous evaluation of new products or processes of relevance for wine production;
  • be able to critically evaluate the potential application of a selected novel product, technique and technology for wine production, considering economic, logistic and product quality impacts;
  • be able to effectively communicate innovations in wine making to diverse audiences;
  • be able to critically evaluate the planning, marketing, management and assessment procedures employed in a national or regional wine show.

Syllabus

This subject will cover the following topics:
  • Overview of new products, techniques and technologies under investigation for application to wine production;
  • Identification and analysis of scientific and trade literature relevant to wine production;
  • Techniques for evaluating the potential commercial application of new techniques and technologies;
  • Communicating innovations in wine production;
  • Overview of wine shows and other methods for evaluating wine quality.

Workplace Learning

This subject contains a 2 to 4 days Compulsory Workplace Learning component.

Students will be required to attend a wine show where they will observe and record the logistic, evaluation and management systems employed, and the participants behaviours.

Special Resources

Students will be required to attend a wine show to observe and record the logistic, evaluation and management systems employed, and the participants behaviours. Pre- and post-show activities are also required, but can normally be completed via access to online wine show information and/or discussion with show officials.
