THE NEW paradigm in wine industry research is to take into account consumer expectations in relations to wine composition. Semillon will be the variety of focus in this theme with regional emphasis on the Hunter Valley and the Riverina. The research team will assess the impacts of region, site and crop productivity on Semillon vine physiology and wine sensory attributes over several seasons.
The project will analyse consumer preferences and conduct chemical and sensory testing to examine the link between grape production and wine composition. Winemaker preferences for blending Semillon will also be established. Key flavour and aroma compounds will be identified and vineyard and wine production practices that enhances these compounds will be determined.
