Produced from premium Cabernet Sauvignon grapes grown in the cool climate Hilltops region (Young) on the south west slopes of New South Wales, and the university's vineyard at Wagga Wagga. The Merlot grapes were grown in the Cowra district of New South Wales. The blend is approximately 85% Cabernet Sauvignon and 15% Merlot. The wine is a deep garnet colour with purple hues. The bouquet is complex with aromas of rich, ripe fruit, spice and herbs. The palate is full with a range of lingering berry flavours. The wine has excellent balance with a long, firm, fine tannin finish. This is a rich complex wine with flavours well integrated from 18 months maturation in a combination of new and old French oak barrels. This wine is an ideal accompaniment to game and red meat dishes.

The palate is complex with peach and apricot flavours and a touch of vanilla from fermentation in French oak barrels. This is a rich, full flavoured, complex style wine with a clean acid finish.
Produced from very ripe Muscat Frontignac grapes grown in the CSU vineyard. The grapes are allowed to shrivel and raisin on the vine to produce the richness and sweetness required for the style. A luscious dessert wine produced with a traditional solero system. The solero is used to blend and balance the fresh fruit flavours of young muscat with the rancio characters of aged wine that was matured in a mix of both large and small oak casks before the final blending and bottling.
This port was made from the Portuguese grape varieties Tinta Cao & Touriga grown in the University vineyards. The base wines were fortified with carefully selected aged brandy spirit and blended over an extended period through a traditional solero. The result is a port style which reflects the drier, more elegant styles of Portugal.

The bouquet shows mintiness from the Cabernet supported by sweet berry fruit aromas underpinned by spicy oak. The palate is full, rich and round with layers of berry flavours and spice. The wine has excellent balance with a long firm, fine tannin finish. This wine will be further enhanced with five to eight years cellaring from the vintage date.
