2004 Limited Release Cabernet Sauvignon Merlot

Produced from premium Cabernet Sauvignon grapes grown in the cool climate Hilltops region (Young) on the south west slopes of New South Wales, and the university's vineyard at Wagga Wagga. The Merlot grapes were grown in the Cowra district of New South Wales. The blend is approximately 85% Cabernet Sauvignon and 15% Merlot. The wine is a deep garnet colour with purple hues. The bouquet is complex with aromas of rich, ripe fruit, spice and herbs. The palate is full with a range of lingering berry flavours. The wine has excellent balance with a long, firm, fine tannin finish. This is a rich complex wine with flavours well integrated from 18 months maturation in a combination of new and old French oak barrels. This wine is an ideal accompaniment to game and red meat dishes.

Independant research supports our belief that the screw cap seal on this bottle is the most appropriate high quality closure for this premium wine.

2005 Limited Release Pinot Noir Chardonnay (sparkling wine)

The grapes were all grown in the premium cool climate Tumbarumba region, which ensured that the fruit retained natural acidity at low sugar levels while developing delicate fruit flavours.
The wine has developed complexity and flavour from extended maturation on yeast lees prior to disgorging by the traditional method.The primary fruit flavours, combined with the extended maturation on yeast lees has resulted in an elegant sparkling wine. A mark of the quality of any sparkling wine is the level of “dosage” or sugar needed in the disgorging liqueur, and this wine was remarkable in that the dosage was only 3g/L. The dosage also included a portion of our trophy-winning 2002 Limited Release Chardonnay, which has added complexity.

2005 Limited Release Sparkling Shiraz

This wine is a typical Australian rich flavoured sparkling Shiraz. The grapes were sourced from vineyards on the South West Slopes of New South Wales. The wine was disgorged in September 2005 after developing richness and complexity from two years maturation on yeast lees. The palate has rich berry fruit and cherry flavours with a persistent clean finish.

Independant research supports our belief that the crown seal on this bottle is the most appropriate high quality closure for this premium sparkling wine.

2007 Limited Release Chardonnay (Orange)

Produced from premium Chardonnay grapes grown in the cool climate Orange district on the central tablelands of New South Wales. The wine is a bright mid straw colour. The bouquet has lifted apricot and citrus characters. The palate is complex with peach and apricot flavours and a touch of vanilla from fermentation in French oak barrels. This is a rich, full flavoured, complex style wine with a clean acid finish.

The College Muscat (Liqueur Muscat) (375ml)

Produced from very ripe Muscat Frontignac grapes grown in the CSU vineyard. The grapes are allowed to shrivel and raisin on the vine to produce the richness and sweetness required for the style. A luscious dessert wine produced with a traditional solero system. The solero is used to blend and balance the fresh fruit flavours of young muscat with the rancio characters of aged wine that was matured in a mix of both large and small oak casks before the final blending and bottling.

The College Tawny (Liqueur Port) (375ml)

This port was made from the Portuguese grape varieties Tinta Cao & Touriga grown in the University vineyards. The base wines were fortified with carefully selected aged brandy spirit and blended over an extended period through a traditional solero. The result is a port style which reflects the drier, more elegant styles of Portugal.

Late Harvest Dessert Wine (375 mL)

This wine is a luscious blend of selected wine from the 2004 and 2005 vintages to achieve the desired qualities of a classic dessert wine. This is a complex wine with pear and butterscotch flavours and a crisp, clean finish.

2006 Limited Release Pinot Gris

Produced from Australia's first Pinot Gris vines planted in 1978. The wine has a subtle perfumed floral bouquet with mineral and savoury undertones. The palate has melon and peach flavours with a crisp long acid finish. This wine is a perfect accompaniment to antipasto.

2005 Cellar Reserve Cabernet Sauvignon/Shiraz

Our second release of a Cabernet Sauvignon / Shiraz blend under this label. This wine is 51% Cabernet Sauvignon and 49% Shiraz. Extensive blending trails resulted in this rich complex wine. The bouquet shows mintiness from the Cabernet supported by sweet berry fruit aromas underpinned by spicy oak. The palate is full, rich and round with layers of berry flavours and spice. The wine has excellent balance with a long firm, fine tannin finish. This wine will be further enhanced with five to eight years cellaring from the vintage date.

2007 Cellar Reserve Alfresco Rosso

This fresh, fruity red wine is produced from a blend of free run juice from Grenache, Petit Verdot and Mourvedre grapes. Fresh berry fruit flavours abound, the palate is soft and round with a touch of sweetness. Best served slightly chilled, and enjoyed dining "alfresco" on warm summer days and evenings.

2007 Shiraz

The grapes were all grown in the university’s vineyards in Orange, a premium cool-climate region.The nose is spicy, featuring white pepper and dried herbs, along with ripe berry fruit flavours.  These berry flavours are also evident on the palate, which is supported by subtle, well-integrated oak and a firm, fine tannin finish.  The result is a wine that goes very well with savoury pasta, or with grilled meats.  The tannins and acidity provide a firm backbone that complements but is not overwhelmed by food.

2005 Cabernet Sauvignon / Merlot / Cabernet Franc

Produced from grapes grown in the University's vineyards in Orange and Wagga Wagga, and the premium Hilltops region around Young on the South West Slopes of NSW. The wine has a sweet blackcurrant bouquet with a hint of cloves. The palate has intense sweet berry fruit flavours underpinned with well integrated French oak and a lingering finish with fine, velvety tannins.

Cellaring potential: best with 3 - 5 years bottle maturation.

2008 Chardonnay

Produced from premium Chardonnay grapes grown in the University  vineyards at Wagga Wagga and in the cool climate region of Orange in the Central Tablelands of NSW. The wine has a bouquet of pear and white nectarine; the palate is full and rounded with stonefruit and grapefruit flavours. There is added complexity from a portion of the wine being fermented in new French Oak. this is a fruit dominant wine with a long crisp acid finish.

2008 Sauvignon Blanc

Produced from grapes grown in the University's vineyard in the cool climate region of Orange on the Central Tablelands of New South Wales. The wine has a lifted herbaceous and tropical fruit bouquet. The palate has fresh tropical fruit and citrus flavours, good length and a crisp acid finish. This is a wine intended to be drunk while young and fresh.

2006 Riesling Traminer

Produced from a blend of Riesling and Gewurtztraminer. The wine has a lemon zest bouquet, the Riesling grapes contribute fresh lime citrus flavours to the palate and the distinctive tropical fruit flavours come from the Gewürztraminer. This is a fresh fruity table wine with a touch of sweetness. The wine is an excellent accompaniment to spicy Asian food or fresh fruit.

2008 Alfresco Bianco

Produced from a blend of white grape varieties. This is a fresh fruity table wine reminiscent of freshly squeezed Muscat grapes, with a rich, sweet palate. Serve the wine chilled and enjoy when dining 'alfresco' on warm summer days and evenings. The wine is an excellent accompaniment to spicy Asian food or fresh fruit.
