Learning OutcomesUpon successful completion of this subject, students should:
* have an understanding of the need for food in living organisms;
* be familiar with the major constituents of food and their function;
* appreciate the major causes of food poisoning and spoilage;
* have a knowledge of the major processes used in food preservation;
* understand the concepts of mass and energy balance;
* appreciate the importance of cleaning and sanitation in the food industry;
* have a basic understanding of requirements for packaging of food;
* have a knowledge of the major areas of legislation relevant to the food industry |
