Abstract

This subject provides an overview of the food processing industry.
It introduces students to issues such as food safety and nutrition,
causes and control of food poisoning and spoilage, diet and health,
food laws and regulations, as well as the manufacture of some of
the common food products.

Learning Outcomes

Upon successful completion of this subject, students should:
* have an understanding of the need for food in living organisms;

* be familiar with the major constituents of food and their function;

* appreciate the major causes of food poisoning and spoilage;

* have a knowledge of the major processes used in food preservation;

* understand the concepts of mass and energy balance;

* appreciate the importance of cleaning and sanitation in the food industry;

* have a basic understanding of requirements for packaging of food;

* have a knowledge of the major areas of legislation relevant to the food industry

The subject will cover the following topics:

Residential School
